- 4 large eggs
- 2 cups sugar
- 1 cup vegetable oil (we use coconut oil)
- 1 can (15 oz.) pumpkin
- 2 cups all-purpose flour (I use unbleached)
- 2 teaspoons baking powder
- 2 teaspoons ground cinnamon
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground cloves
- Preheat oven to 350 degrees. Grease the bottom and sides of a jelly roll pan with butter or coconut oil. (Recommended pan size is 15.5 x 10.5 x 1 inch.)
- Beat together the eggs, sugar, oil, and pumpkin in a large bowl until smooth.
- Stir in flour and remaining dry ingredients.
- Spread batter in the pan.
- Bake 25 to 30 minutes or until light brown.
- Cool completely in pan on wire rack, about 2 hours.
- Frost with Cream Cheese Frosting.
- Cut into bars and store covered in refrigerator.
- 1 package (3 oz) cream cheese, softened
- 1/3 cup butter, softened
- 1 teaspoons vanilla
- 2 cups powdered sugar
- Beat cream cheese, butter, and vanilla in a medium bowl until smooth. Gradually beat in powdered sugar, one cup at a time, on low speed until smooth and spreadable.

Yum! Those pumpkin bars look awesome!! I'm pretty sure my family would not object if I made those! 😉 I was wondering if you had heard of the Prudent Homemakers blog? She has a website as well. She knows very well what it's like to live on a reduced income. She has many wonderful recipes and ideas for her readers. You should check it out (if you haven't already).
