Coconut Cream Cheese Squares

Plain or with chocolate chips, for chocolate lovers!
Ingredients:
1 box (8 oz) cream cheese, softened
1 stick butter, softened
4 large eggs
1/2 cup organic whole sugar (I used Rapadura the first time, and regular white sugar this time)
1 cup Tropical Traditions organic coconut flour
2 1/2 teaspoons vanilla extract
1 Tablespoon Virgin Coconut Oil (for greasing pan–if the temperature in your house is cold and the coconut oil is solidified, you’ll need to melt it or just rub it on the pan)
Procedure:
1. Preheat oven to 350 degrees. Brush pan with coconut oil.
2. Beat butter and cream cheese in a mixing bowl with an electric mixer. Mix until light and fluffy.
3. Add eggs one at a time. Beat well.
4. Add sugar gradually, and continue mixing.
5. Add coconut flour and vanilla; beat until well blended.
6. Spread batter into an 11″x7″ rectangular pan (my baking dish had different dimensions than this, so my bars are flatter!). Using a rubber spatula makes this easier.
7. Bake at 350 degrees for 30 minutes.
8. Cool the pan on a wire rack for 10 minutes.
9. Slice into squares. Enjoy!
This dessert is gluten free and so good (it’s not over-sweet, so if you like sweeter things it may not taste like dessert to you!). To me they taste reminiscent of cheesecake, but the children thought it wasn’t very sweet. They all thought the addition of chocolate chips helped the taste.  My husband and I like them, but I have to admit these aren’t a favorite with kids.  🙂
