It’s easy to make and so very good!
Country Soup Supper Ingredients
- 3 whole cloves
- 1 small yellow onion
- 5 Â 15-1/2 oz. cans Great Northern beans, drained and rinsed
- 6 c. water
- 1/2 lb. cooked ham, diced, or 3 smoked ham hocks
- 2 c. potatoes, peeled and cubed
- 1-1/2 c. sweet onion, chopped
- 2/3 c. celery, chopped
- 2/3 c. carrot, peeled and sliced
- 1/2 t. dried thyme
- 1 t. dried parsley
- 1 bay leaf
- 1 t. salt (This is my favorite salt)
- 3/4 t. pepper
- 2 T. fresh parsley, chopped
How to Make Country Soup Supper
- Press cloves into whole onion; set aside.
- In a large stockpot, combine remaining ingredients except parsley; add onion with cloves.
- Bring to a boil; reduce heat, cover and simmer for 45 minutes, stirring occasionally.
- Discard onion with cloves and bay leaf.
- Remove ham hocks, if using; dice meat and return to soup. Â Stir in parsley.
