Instant Pot Black Beans and Rice

This is a quick and easy recipe for black beans and rice in the Instant Pot pressure cooker.

  • 2 pounds black beans (about 5-5 1/2 cups, soaked)
  • 10 cups water
  • 4 tbsp olive oil
  • 4 tsp salt
  • 4 cloves garlic minced
  • 1 medium onion chopped (optional)
  • 1 tbsp cumin
  • 2 bay leaves
  1. Sort beans and rinse well. Soak beans in water overnight.
  2. Combine ingredients in the Instant Pot and stir.
  3. Cover with lid and turn into locked position. Set the vent to sealing.
  4. Manually set cooking time for 6 minutes for previously soaked beans.

  5. After timer goes off, let pressure release naturally for 30 minutes and then do a quick release before removing the lid.
  6. Serve over rice. We like to add salt and pepper, garlic salt, and hot sauce to taste (we add seasonings to individual bowls after serving).
Recipe Notes

If you didn't soak your beans, I would try 20-25 minutes for the cooking time. I haven't tested this since I prefer to soak mine overnight before cooking.
