Chocolate Oatmeal Bars

These chocolate oatmeal bars are sweetened with honey and quick to make! They're the perfect snack or breakfast!

Ingredients

  • 1 cup butter melted
  • 1 cup honey
  • 4 1/2 cups rolled oats
  • 1 cup whole wheat flour
  • 1 tsp baking soda
  • 1 tsp vanilla
  • 2 cups semi-sweet chocolate chips

Instructions

  • Preheat the oven to 325 degrees. Grease a 9" x 13" glass baking dish with butter.
  • In a large mixing bowl, combine the melted butter and honey, and mix well with a spoon.
  • To the butter and honey mixture, add the rolled oats, flour, baking soda, and vanilla and mix well.
  • Stir in the chocolate chips just until combined with the other ingredients.
  • Pour the mixture into the prepared baking dish and press it firmly into the pan with the back of a spoon or fork.
  • Bake at 325 degrees for 15-20 minutes or until golden brown. (I start checking them at about 15 minutes, but it usually takes a bit longer before they are done—sometimes as long as 25 minutes, depending on your oven.) The bars may not feel "done," but instead they will still be very moist. Don't worry, they'll firm up a bit as they cool.
  • Allow to cool for at least 10 minutes before cutting into bars. Then let them cool completely before removing from the pan and serving. Store the bars at room temperature in a covered container.
