Chocolate covered apple slices are a fun variation on caramel apples. These are the perfect kid-friendly treat for fall! Sliced apples on a stick are dipped in melted chocolate, then drizzled with white chocolate and caramel, and then decorated with a variety of toppings.

1(10 oz)bag chocolate melting wafers
⅓cupwhite chocolate melting wafers
½cupmelting caramels
1Tbspheavy cream

Instructions
Line a baking sheet with parchment paper and set aside.
Cut apples into ½ inch thick slices and place on a paper towel. Put another paper towel on top of the apples and gently press down to remove as much excess water as possible. If the apples are wet, the chocolate will not stick.
Using a knife, cut a small slit in the bottom of the apple. Then, insert the popsicle stick. (Using a knife first will prevent the apple from cracking when inserting the stick)
In a double boiler or a microwave safe bowl, melt the chocolate wafers according to the package.
Dip each apple into the melted chocolate and use a spoon/spatula to cover completely. Allow any excess chocolate to drip off and place the apple onto the baking sheet to harden. Repeat until all the apples are coated. Place in the refrigerator to harden.
Meanwhile, in a small bowl or a double boiler, melt the white chocolate wafers according to the package.
Pull the apples out of the refrigerator and drizzle with white chocolate.
Lastly, make the caramel by adding the melting caramels and heavy cream to a small saucepan on low heat. Stir constantly for 3-5 minutes until a smooth sauce has formed. Immediately drizzle onto the apples.
Add your toppings quickly before the caramel dries. Enjoy!
Notes
You can use any kind of melting wafers. I find that Ghirardelli always melts the best.If you want to make the apple slices in advance, before dipping in the melted chocolate, briefly soak them in a small amount of lemon juice, then pat them dry with a paper towel and store in the refrigerator. The lemon juice will help prevent the apples from browning as quickly. However, I'd only recommend making them a couple of hours in advance. These are best eaten fairly soon after making them.
