Notes
I don’t include salt or pepper in my poultry seasoning blends because those should be added to each dish individually and adjusted to taste. The amount you need will vary depending on what you’re making.
Don’t shy away from the nutmeg, either. It’s actually a common component in many store-bought poultry seasonings and adds a unique depth of flavor. If you prefer to leave it out, you can—but you’ll lose one of the blend’s more dynamic notes.
I don’t have a precise measurement to recommend, since the right amount depends on the dish. Start with a small amount and add more as needed.
After tasting, feel free to tweak the seasoning to match your preferences. There’s no need to stick strictly to the amounts listed above.
