Instructions
Preheat oven to 400°F. Spray a baking sheet with cooking spray (or line with parchment paper) and set aside.
Place diced sweet potatoes in a small bowl. Drizzle with 1 Tbsp olive oil, fresh minced thyme and salt and pepper to taste. Toss to coat. Pour out onto one side of your sheet pan.
Place halved Brussel sprouts into a small bowl. Drizzle with 1 Tbsp olive oil, balsamic vinegar and salt and pepper to taste. Toss to coat. Pour onto the other side of your baking sheet.
Put the baking sheet in the oven and set a timer for 15 minutes.
Meanwhile, slice the sausage into smaller pieces. When the 15 minute timer is up, remove the sheet pan from the oven and place the sausage on top of the veggies. Continue to bake for another 15 minutes.
When the baking time is up (30 minutes total), remove the pan from the oven and serve.
Notes
How to StoreStore any leftovers in an airtight container in the refrigerator for up to 4 days. Reheat in a skillet or the oven until warmed through to keep the veggies crisp.It also freezes well. Let it cool completely, then transfer to a freezer-safe container or bag and freeze for up to 2 months. To reheat, thaw overnight in the refrigerator and warm in the oven at 375°F until heated through and slightly crisp.This sheet pan dinner goes well with rice and a side salad.
