How to Make Sheet Pan Sausage and Veggies

Here are the step-by-step instructions for making this recipe:

Step 1: Spray a baking sheet with cooking spray and set aside.

Step 2: Place diced sweet potatoes in a small bowl (Photo 1). Drizzle with 1 tablespoon olive oil, fresh minced thyme, and salt and pepper to taste. Toss to coat, then pour out onto one side of your sheet pan in a single layer.

Step 3: Place halved Brussels sprouts into a small bowl. Drizzle with 1 tablespoon olive oil, balsamic vinegar, and salt and pepper to taste (Photo 2). Toss to coat, then pour onto the other side of your baking sheet.

Step 4: Put the sheet pan into the oven and set a timer for 15 minutes.

Step 5: Meanwhile, slice the sausage into smaller pieces. When the 15 minute timer is up, remove the sheet pan from the oven and place the sausage on top of the veggies (Photos 3 and 4).

Step 6: Continue to bake for another 15 minutes. Remove the pan from the oven, serve, and enjoy!

It also freezes well. Let it cool completely, then transfer to a freezer-safe container or bag and freeze for up to 2 months. To reheat, thaw overnight in the refrigerator and warm in the oven at 375°F until heated through and slightly crisp.

Ingredients 

  • 3 cups diced sweet potatoes, 2 medium sweet potatoes
  • 2 Tbsp olive oil, divided
  • 1/2 Tbsp fresh thyme
  • Salt and pepper to taste
  • 3 cups brussels sprouts, halved
  • 1 Tbsp balsamic vinegar
  • 1 14 oz package kielbasa, Or your preferred type of sausage

Instructions 

  • Spray a baking sheet with cooking spray and set aside.
