Preheat oven to 275 degrees. Grease a 5" x 9" loaf pan and set aside.
In a large mixing bowl, mash peeled bananas with a potato masher or the back of a fork. Then add eggs, honey, oil, and vanilla. Mix well.
In a separate bowl, stir together the flour, baking soda, salt, and cinnamon. Add optional nuts if desired. (When I add nuts, I usually use walnuts.)
Add dry ingredients to wet ones and mix well.
Pour into the greased loaf pan. Bake at 275 degrees for 1 hour and 25 minutes, or until toothpick inserted in center comes out clean (you may want to start checking at 1 hour and 15 minutes, as oven temperatures vary).
Remove from oven and cool for 10 minutes in pan on a wire rack. Then loosen sides of loaf from pan, remove loaf from pan, and place on wire rack to cool completely before slicing. It may take an hour or two to cool completely. Enjoy!
