These sourdough s'mores cookies are soft, chewy, and loaded with gooey marshmallows, chocolate, and graham crackers for the perfect bakery-style treat.
In a large mixing bowl, whisk together the melted butter, brown sugar, and granulated sugar until smooth and glossy.
Add the egg, egg yolk, vanilla extract, and sourdough discard. Whisk until fully combined.
In a separate bowl, whisk together the flour, baking soda, baking powder, and salt.
Gradually fold the dry ingredients into the wet ingredients until just combined. Fold in the chocolate chips and graham cracker pieces.
Cover the dough and refrigerate for at least 45 minutes or up to overnight.
Preheat the oven to 325°F and line a baking sheet with parchment paper.
Using a 3-tablespoon cookie scoop, scoop the dough and flatten slightly. Place half of a regular-size marshmallow in the center, then wrap the dough around the marshmallow, sealing well. Roll into a ball and gently flatten the top.
Place 5–6 cookies on the prepared baking sheet, leaving space between each cookie.
Bake for 9–11 minutes, or until the edges are lightly golden and the centers are still pale and soft.
Immediately after baking, press a Hershey square into the center of each cookie.
Optional: Press a few additional chocolate chips and graham cracker pieces into the tops of the warm cookies for decoration and texture.
For perfectly round cookies, use a large round cookie cutter or drinking glass to gently swirl around the cookies immediately after baking.
Allow the cookies to cool on the baking sheet for about 5 minutes before transferring to a cooling rack.
