We liked the dehydrated tomatoes and ate most of them just plain! The kids thought they were a great snack. They also work well to add to a stew or soup.
I think they would turn out even better if you have a high-quality dehydrator (like an Excalibur). Ours doesn't have any temperature control so it took forever for the tomatoes to dry out, and even then I wasn't sure they had dehydrated enough to just store them at room temperature. I ended up freezing the bags that weren't eaten pretty quickly, just because I was concerned that they hadn't dried out enough. I would really like to get an Excalibur sometime, as I think it would do a better job.

I was just looking through your blog and came across this post. Out of curriosity…how did your dehydrated tomatoes turn out and how did you use them? Last year I had an abundance of cherry tomatoes as well. I froze a bunch and I canned some also. I had never frozen any before and I was pleased with the results. It was easy to grab what I needed for soups or stews and as they defrost they pop right out of their skins. If I have alot this year I think I'll try the dehydrator if you were pleased with the results!
