Step 2: In a medium skillet, warm the olive oil over medium heat, then add celery and carrots. Cook for 3 minutes or until vegetables are softened (Photo 3).
Step 3: Add the celery and carrots to the crockpot, along with garlic powder, beau monde, onion powder, and oregano (Photo 4).
Homemade Beau Monde Seasoning
If you don’t have beau monde seasoning on hand, you can either omit it, add a bit more onion and garlic powder, or make your own with this recipe:
- ½ teaspoon celery seed (or ½ tsp celery salt)
- ¼ teaspoon onion powder
- ⅛ teaspoon garlic powder
- ⅛ teaspoon white pepper
- A tiny pinch of sugar
- A tiny pinch of nutmeg or allspice (optional but authentic)
