This easy slow cooker beef and broccoli recipe is a great way to make a takeout-style dinner at home.

Thinly sliced beef cooks in a sweet and savory sauce made with soy sauce, brown sugar, garlic, and ginger. Add broccoli near the end, and you’ve got an easy slow cooker dinner to serve over rice.

Using the Crock Pot gives the beef plenty of time to become tender without needing much attention. There’s just a little prep at the beginning, and the sauce thickens with cornstarch before serving.

It’s a good choice for busy weekdays when you want dinner mostly taken care of ahead of time.

Ingredients

Find the full list of ingredients, amounts, and instructions in the recipe card at the bottom of this post.

  • Beef chuck roast: Slice the beef thinly across the grain, about ¼ inch thick, so it becomes tender as it cooks. You can also use flank steak or strip steak.
  • Beef stock or broth: Forms the base of the sauce and provides additional beef flavor.
  • Brown sugar: Balances the soy sauce and gives the finished sauce its sweetness.
  • Broccoli: Frozen broccoli work well, but you can also use fresh broccoli florets. Add them near the end of cooking to prevent overcooking.
  • Soy Sauce: Low-sodium soy sauce adds flavor without being too salty.

Frequently Asked Questions

Can I use a different cut of beef?

Yes. If chuck roast isn’t available at your grocery store, try skirt steak, chuck steak, or a sirloin roast if sliced thin.

Can I cook this on high?

Yes. Cook on high for 3–4 hours, but low gives more tender results.

When should I add broccoli?

Add during the final 30 minutes to prevent overcooking.
