Healthy “Magic Shell”

Wondering how to make your own homemade healthy “magic shell” topping for ice cream? Use this easy recipe to enjoy healthy and delicious hard ice cream topping!
We love Tropical Traditions Coconut Oil, and we use it weekly.  We use it in Baked Oatmeal, regular oatmeal (instead of butter), in cakes and cookies (in place of vegetable oil), on skin as a moisturizer, etc. But one of the best things I’ve ever made with coconut oil is Kimi’s Fudge! My husband regularly requests this fudge.  He loves chocolate, and knowing that this fudge is actually good for you makes it even better.
One evening a year or so ago, I was making the fudge for dessert, and I had a thought–since coconut oil hardens in the freezer, I figured it would harden on ice cream, just like Magic Shell.  So instead of continuing on with the fudge recipe (letting it harden in the freezer), we drizzled it over ice cream, and it was wonderful!  It did just what I thought it would…it hardened right after landing on the ice cream, leaving us with a healthy version of Magic Shell.

Here are the ingredients needed for the fudge recipe, from Kimi at The Nourishing Gourmet (which is one of my favorite recipe sites, by the way!):
The ingredients:  coconut oil, sea salt (this is the Himalayan pink salt), cocoa, vanilla (I’m using my homemade vanilla, stored in a recycled Swedish Bitters bottle), and palm sugar.
 
The recipe calls for palm sugar paste, but we use this hardened kind (we couldn’t find the paste at our local ethnic food store):
This sugar is delicious (tastes like confectioner’s sugar to me), but it has to be grated:
We also use the hand mixer (instead of the food processor, as the recipe calls for–because we don’t have a food processor), and it turns out so very good!
