BBQ Chicken Sheet Pan Dinner
Ingredients
- 3 cups broccoli florets
- 3 cups diced sweet potatoes, 2 medium sweet potatoes
- 1/2 cup diced yellow onion
- Salt and pepper, to taste
- 1.5 lbs boneless skinless chicken breast
- 1/2 cup BBQ sauce
- 1 cup pineapple chunks
- 2 Tbsp olive oil, divided
- 2 Tbsp lemon juice
- 1/3 cup parmesan cheese
Instructions
- Preheat the oven to 400 degrees F. Line a baking pan with foil and set aside.
- Chop the broccoli (leave in large pieces), sweet potato and onion.
- Salt and pepper both sides of the chicken breast and place them in the middle of the baking sheet. Liberally brush BBQ on both sides of the chicken
- In a medium sized bowl, add in sweet potato, pineapple and onions. Toss with 1 Tbsp of olive oil, salt and pepper. Place on one side of the baking sheet.
- In that same bowl add the broccoli. Toss with the remaining 1 Tbsp of olive oil, salt and pepper. Add broccoli to the other side of the baking sheet.
- Bake for 25 minutes. Chicken will be done when it reaches 165 degrees F. Baking time may vary based on the size of your chicken breasts.
- Remove the chicken and sweet potatoes from the baking sheet and set aside. Set the oven to broil.
- Spread out the broccoli on the baking sheet. Using the bottom of a glass press each floret to flatten. Drizzle with lemon juice and place parmesan cheese on top.
