Ground Beef Sheet Pan Quesadillas

Other recipes look like they might be good but because they contain unusual ingredients or take so much time to prepare, they’re just not practical for a busy mom. 

That’s a major thing to love about these sheet pan beef quesadillas! All of the ingredients are everyday items (probably already in your pantry or freezer) that are easy to find and won’t break the bank.

Plus, it only takes about 45 minutes from start time until it’s ready to eat, making it an easy dinner recipe. That’s another huge plus!

Supplies Needed for This Recipe

Ground Beef Sheet Pan Quesadillas Ingredients

  • Ground beef: We try to find grass-fed beef if at all possible. 
  • Tortillas: Flour tortillas are another budget-friendly ingredient that adds taste and texture to this dish. If you’re into sourdough, you can make your own homemade sourdough tortillas.
  • Taco seasoning: Give your quesadillas that delicious Mexican-food flavor with packaged taco seasoning or make your own. I like to make homemade taco seasoning in bulk so I always have some on hand. I buy spices in bulk from Azure Standard.
  • Black beansBlack beans add color, are another good source of protein, and also have healthy fiber. 
  • Corn: Crunchy corn kernels add flavor to this dish. 
  • Green chiles: Green chiles contribute a touch of heat to the quesadillas without being overpowering (you can also use hot chilis if you prefer).
  • Mexican cheese mix: Quesadillas (the Spanish name for cheese-filled tortilla) wouldn’t have their name without the flavorful cheese! 
  • Butter: You’ll use a touch of salted butter on top of the tortillas to make them golden and crispy. 

How to Make Ground Beef Sheet Pan Quesadillas 

1. Heat a medium skillet over medium-high heat. Add the ground beef and cook until browned. Remove from the heat and drain the grease. Stir in the taco seasoning and let cool for 10 minutes.

2. In a large mixing bowl, add the beef, corn, black beans, and green chilis. Stir together.

3. Prepare a 9”x13” baking sheet by spraying it with cooking spray. Lay 2 tortillas in the middle of the pan (a.), then continue laying 6 more tortillas around the edges, making sure half of each tortilla hangs off the edge (b.).

4. Add the beef mixture and spread evenly (c.). Sprinkle on the cheese (d.).

5. Place 2 more tortillas on top of the mixture (e.). Fold over the tortillas hanging off the edge (f.). Melt the butter and spread it on top of the quesadilla (g.).

6. Place a second pan on top of the quesadilla to hold the tortillas down (h.). Bake in a 425º F oven for 15 minutes, then remove the top baking pan and cook for another 5 minutes, or until the tortillas are golden and crispy.

7. Let cool for a couple of minutes. Cut into rectangles and enjoy!

How to Serve

These quesadillas would go well with a lettuce salad or guacamole.

You could add any of your favorite toppings such as diced onion and bell pepper, pico de gallo or salsa. Sour cream and extra Mexican or cheddar cheese would be other great additions. 

How to Store

Store any leftover quesadillas in an airtight container in the fridge. They should stay good for three to four days.

To reheat, put leftovers in a covered baking dish and warm in the oven at 350 degrees F for about 10 to 15 minutes.
