It’s easy to make and so very good!

Country Soup Supper Ingredients

  • 3 whole cloves
  • 1 small yellow onion
  • 5  15-1/2 oz. cans Great Northern beans, drained and rinsed
  • 6 c. water
  • 1/2 lb. cooked ham, diced, or 3 smoked ham hocks
  • 2 c. potatoes, peeled and cubed
  • 1-1/2 c. sweet onion, chopped
  • 2/3 c. celery, chopped
  • 2/3 c. carrot, peeled and sliced
  • 1/2 t. dried thyme
  • 1 t. dried parsley
  • 1 bay leaf
  • 1 t. salt (This is my favorite salt)
  • 3/4 t. pepper
  • 2 T. fresh parsley, chopped

How to Make Country Soup Supper

  1. Press cloves into whole onion; set aside.
  2. In a large stockpot, combine remaining ingredients except parsley; add onion with cloves.
  3. Bring to a boil; reduce heat, cover and simmer for 45 minutes, stirring occasionally.
  4. Discard onion with cloves and bay leaf.
  5. Remove ham hocks, if using; dice meat and return to soup.  Stir in parsley.
I didn’t discard the onion with cloves in it.  That seemed wasteful to me, so I just took the cloves out and cut the onion up with my kitchen shears and we ate it in the soup.  🙂
Also, we have a larger-than-average family and this made just enough for us to all have one big bowl.  There were no leftovers, so I don’t see how it could serve the suggested 10-12 people unless this was used as an appetizer or you had other dishes with it.
We also put grated cheese on top of ours, at my husband’s suggestion.  That did make it taste good.  🙂  I thought it was good enough to make again.
