Make Simple Meals {Day 27}

One of the ways I’ve found to save money in the kitchen is to keep food simple. Rather than making elaborate dishes, I pretty much stick to the basics. I do really enjoy cooking special recipes, but often they’re more expensive, so I save them for special occasions.
Here are a few simple meals we enjoy:
- Easy Chicken and Rice
- Refried Beans in the Crock Pot (burritos)
- My Grandma’s Hamburger Stew (I pretty much just use whatever I have on hand for this soup.) I love soups, especially for the winter months. Here’s a list of 50 Real Food Soups that might be a great resource for soup ideas.
- Basic Quiche (crustless)
- Spaghetti
- Taco Salad
- Chili
For side dishes, we often just have a simple salad from the garden (we’re now enjoying lettuce and swiss chard from our fall garden!), fried cabbage, or something equally simple.
Hi Joy, this is something we try and do all the time to stay on budget. Thank you for sharing some of your simple recipes. We also love which really amazes me is "steamed cabbage". Drizzle with some olive oil or butter, sprinkle with sea salt, delicious 🙂 I mention it since you mentioned cabbage… I am enjoying this series very much. Have a lovely weekend!
Your steamed cabbage sounds similar to how I do ours (and my children actually love it!). I just fill a large stainless steel skillet with butter and/or coconut oil (I use the expeller-pressed coconut oil for this, so it doesn't give off a coconut flavor) and then add the cut up cabbage. Then I cook it for about 5 minutes with the lid off, stirring occasionally, and then for about 5-10 minutes with the lid on. It stays nice and green and just gets soft and buttery and wilted. Then I add about a teaspoon of sea salt (or more, to taste), and sprinkle on some pepper. It's sooo good! 🙂
