Vegetable beef stir-fry is a delicious but simple meal idea.

Vegetable beef stir fry is one of my family’s favorite meal ideas! It tastes delicious and can be made with healthy ingredients like coconut oil, ginger root, broccoli and peppers.

I prefer to use grass-fed beef whenever possible, but this isn’t always affordable so regular beef works also.

How to Make Vegetable Beef Stir Fry

  1. Cut beef into thin strips (I use my kitchen shears).  Cut all vegetables and set aside.
  2. Heat coconut oil in a wok or large frying pan.  Fry beef until browned.  Remove and drain.
  3. Leaving the juices in the pan, add coconut oil.  Stir-fry ginger and onion in coconut oil.
  4. Add beef broth and stir.  Simmer.
  5. Season with coconut aminos, sherry, and sugar.
  6. Add peppers, mushrooms, carrots, and broccoli, stirring constantly until tender.  Add salt to taste.
  7. Serve while still hot.  I like to serve this over a mound of cooked brown or white rice. My favorite bulk food source is Azure Standard.

Ingredients

  • 6 tbsp coconut oil
  • 2 lbs beef sliced into thin strips
  • 1 tsp ginger root thinly sliced
  • 1/2 cup onion sliced small
  • 1/2 cup beef broth
  • 3 tbsp coconut aminos
  • 2 tbsp sherry, dry wine, or gourmet vinegar
  • pinch sugar raw or regular
  • 3 bell peppers red, yellow, orange or green, sliced thin
  • 1 cup mushrooms sliced
  • 2 carrots medium, sliced into thin spears
  • 1 head broccoli cut into pieces
  • salt to taste

Instructions

  • Cut beef into thin strips (I use my kitchen shears).  Cut all vegetables and set aside.
  • Heat 4 tbsp coconut oil in a wok or pan.  Fry beef until browned.  Remove beef.
  • Leaving the juices in the pan, add 2 tbsp coconut oil.  Stir-fry ginger and onion in coconut oil for 1 minute.
  • Add beef broth and stir.  Simmer for 2 minutes.
  • Season with coconut aminos, sherry, and sugar.
  • Add peppers, mushrooms, carrots, and broccoli, stirring constantly until tender. Add salt to taste
  • Serve while still hot.  I like to serve this over a mound of cooked brown rice.

    Heather, I know what you mean about the price of beef. We were so thankful for some friends of ours selling us some of their grass-fed (pastured) beef at a reduced price. I think this would be very good even without the beef, too! 🙂

  4. Yum! This looks delicious! I think I would leave out the beef, since we don't really eat it here (too expensive for the good stuff), but I love a fresh veggie stir fry over rice. One of my favorite meals!
