In Our Kitchen

We’ve been busy in the kitchen the past few weeks! We have been enjoying tomatoes with every meal! We’ve eaten lots of them, given some away, and I decided to try dehydrating some for later use. The amazing thing about all these tomatoes is that all the little ones came from volunteer tomato plants from last year’s garden.
We’ve also been enjoying some zucchini (although the squash bugs are now devouring them), hundreds of banana peppers, green beans and okra.
I found that I had some frozen cranberries in the freezer from last fall, so the girls have been busy making cranberry bread. We ate some of the loaves and now have a couple loaves in the freezer, too.

    We liked the dehydrated tomatoes and ate most of them just plain! The kids thought they were a great snack. They also work well to add to a stew or soup.

    I think they would turn out even better if you have a high-quality dehydrator (like an Excalibur). Ours doesn't have any temperature control so it took forever for the tomatoes to dry out, and even then I wasn't sure they had dehydrated enough to just store them at room temperature. I ended up freezing the bags that weren't eaten pretty quickly, just because I was concerned that they hadn't dried out enough. I would really like to get an Excalibur sometime, as I think it would do a better job.

  2. I was just looking through your blog and came across this post. Out of curriosity…how did your dehydrated tomatoes turn out and how did you use them? Last year I had an abundance of cherry tomatoes as well. I froze a bunch and I canned some also. I had never frozen any before and I was pleased with the results. It was easy to grab what I needed for soups or stews and as they defrost they pop right out of their skins. If I have alot this year I think I'll try the dehydrator if you were pleased with the results!
