I know pumpkin season is here, but we still have plenty of apples in our kitchen! What better way to use up those apples than in a delicious fall breakfast recipe? Apple Pecan Baked Oatmeal is one of our favorite breakfasts.

Oats are a staple in our pantry that we buy in bulk from our food co-op. We usually have regular oatmeal and baked oatmeal at least once a week, so we’re always on the lookout for new ways to use up our oats.

Apple Pecan Baked Oatmeal

This recipe is a delicious twist on plain baked oatmeal, with a cinnamon/apple/pecan flavor. It’s a big hit at our house! We even like to eat leftovers for a snack (if we ever happen to have any left!).

Apple Pecan Baked Oatmeal

A delicious autumn breakfast treat!

Ingredients 

  • 1/4 cup melted butter or coconut oil
  • 1/2 cup + 1 Tbsp. brown sugar, divided
  • 2 eggs
  • 1 Tbsp. vanilla extract
  • 1/2 tsp. salt
  • 1 tsp cinnamon
  • 1 tsp. baking powder
  • 1 cup milk
  • 2 1/2 cups old fashioned rolled oats
  • 2 cups apples, peeled and diced
  • 1/2 cup pecan pieces
  • 2 Tbsp. butter

Instructions 

  • Preheat oven to 350 degrees. Spray an 8" x 8" baking pan with nonstick cooking spray.
  • In a large bowl, cream together oil, 1/2 cup brown sugar, eggs, vanilla, salt, and cinnamon.
  • Add baking powder, milk, and oats.
  • Stir until oats are well-moistened.
  • Stir in apples and pecans.
  • Pour into prepared pan.
  • Dot with butter and sprinkle with remaining 1 tablespoon of brown sugar.
  • Bake uncovered for 30 minutes until lightly browned.
  • Serve plain, or with milk or yogurt.
  • Notes: We double the recipe and put in a 9" x 13" pan. Add 10 minutes to cooking time if you double it.

    Would this be a crossover for a THM meal as it has oil and nuts along with the oats?

      Yes, this recipe would likely be a crossover, and it would also need an alternative sweetener to make it THM-friendly. When I’m doing THM I make this for my children and then make something more on-plan (like regular oatmeal) for myself.

    Oh, I’m so trying this. I make Baked Oatmeal almost every Sunday Morning – for breakfast!! Especially, in the fall and winter.

    This sounds amazing. One recent time of making baked oatmeal – I chunked fresh peaches on top and that was a real hit… often I’ll just throw on frozen blueberries (right on top) – which are amazing, too!!
