Chicken Apple Sausage Sheet Pan Dinner

Sausages are often thought of as a snack or appetizer, but when I came across the idea of using them as part of a dinner, I knew I wanted to try it!

I spent some time adjusting the ingredients and amounts of seasonings until they seemed to have just the right balance of savory and sweet.

Although not everyone in my family is a huge fan of Brussels sprouts, we all agreed that they seem to fit in and nicely complement the other vegetables of carrots and butternut squash. And they’re so good for you as well!

Regularly eating cruciferous vegetables like Brussels sprouts may help prevent cancer and also help with blood pressure and blood sugar control. Those are some pretty impressive benefits!

When the sausage and Brussels sprouts are combined with crunchy carrots, butternut squash, and sweet apples, the flavor is really good and satisfying.

This is a great meal idea when you have a little extra time to prepare, although the prep time is offset by it not taking a super-long time to bake.

How to Make Chicken Apple Sausage Sheet Pan Dinner

  1. Preheat oven. Line a baking sheet with parchment paper.
  2. Prepare carrots by cutting into small pieces and drizzling them with olive oil. Put them on the sheet pan and put them into the oven.
  3. While carrots are roasting, prepare the other vegetables and sausage. Cut sausages into slices and cut up the other vegetables.
  4. In a small bowl, whisk together the olive oil, vinegar, garlic powder, onion powder, paprika, salt and pepper. Remove carrots from the oven and add sausages and vegetables to the pan. Spoon/drizzle olive oil/balsamic vinegar seasoning mixture over the sausage pieces and vegetables on the pan, and gently toss to coat. Season with more salt and pepper if needed. Spread into an even layer.
  5. Roast in preheated oven, turning everything about halfway through the cooking time. Test vegetables to see if they are done. Squash should be fork tender. The carrots tend to take longer to cook than the other vegetables.

Ingredients

  • 4-5 medium carrots halved and cut into 1-inch pieces
  • 2 packages chicken apple sausages 12 ounces each, cut into 1/2-inch thick pieces
  • 1 lb. butternut squash cubed
  • 1 lb. Brussels sprouts fresh, cut in half
  • 2 apples Honeycrisp, Gala or Fuji, peeled and diced
  • 6 tbsp olive oil
  • 4 tbsp balsamic vinegar
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • 1 tsp sea salt
  • 1/2 tsp black pepper

Instructions

  • Preheat oven to 400 degrees F. Line 1 large or 2 medium baking sheets with parchment paper.
  • Prepare carrots by cutting them into small pieces and then drizzling them with some olive oil. Put them on the sheet pan and put them into the oven for 20 minutes, stirring halfway through.
  • While the carrots are roasting, prepare the other vegetables and sausage. Cut sausages into 1-inch slices and cut up the other vegetables.
  • In a small bowl, whisk together the olive oil, vinegar, garlic powder, onion powder, paprika, salt, and pepper. Remove carrots from the oven and add sausages and vegetables to the pan. Spoon/drizzle olive oil/balsamic vinegar seasoning mixture over the sausage pieces and vegetables on the pan, and gently toss to coat. Season with more salt and pepper if needed. Spread into an even layer.
