This homemade sausage potato kale soup combines flavorful Kielbasa (or any other type of sausage) with fresh kale and just a touch of hot sauce to make a filling dinner meal.
It’s similar to Zuppa toscana, an Italian soup popular at Olive Garden.
It’s also an easy soup to make, taking only 35 minutes from start to finish.
This recipe makes about 10 cups of soup, but it can be adjusted to make more or less depending on your needs.

Sausage Potato Kale Soup Ingredients
- Kielbasa: “Kilebasa” is just the Polish word for “sausage.” You can use any type of sausage (usually U-shaped), whether made of beef, pork or turkey sausage. This sausage is pre-cooked instead of the uncooked kind of sausage.
- Onion: This recipe calls for yellow onion but white onion would work also.
- Fresh garlic cloves: You can use prepared minced garlic but I think freshly minced cloves are the most flavorful.
- Hot sauce: Using hot sauce gives a little kick to your soup. Sweet Baby Ray’s Hot Sauce is one good option. You can use more or less depending on your heat preference.
- Black pepper: Pepper is one of my favorite spices that adds so much flavor to any recipe.
- Mustard powder: Dry mustard powder adds a bit of spicy flavor. It’s one of the best spices to use with soups.
- Paprika: Paprika is a ground sweet pepper that has a somewhat sweet, peppery taste.
- Chicken broth: You can use prepackaged chicken broth, or make your own in the crock-pot or the Instant Pot. I make my own homemade bone broth and store it in glass jars in the freezer. That way I always have some on hand to use in soups and stews.
- Yukon gold potatoes: Cubed potatoes are a central part of this recipe. You could use Russet potatoes but Yukon Gold adds a pleasant nutty, buttery flavor to your soup.
- Butter beans: Although butter beans are similar to lima beans and are sometimes used interchangeably, they have a milder, more buttery flavor that works well in soup.
- Kale: Fresh, chopped kale adds flavor and nutrition that pairs well with sausage and potatoes.
- Heavy cream: The potatoes and butter beans are smooth and buttery, and the heavy cream adds an extra level of creaminess to the soup.
How to Make Sausage Potato Kale Soup
- Prepare the ingredients by slicing the sausage, dice the onion, mince the garlic, finely chop the kale and cut the potatoes into tiny cubes.
- In a large pan or Dutch oven over medium heat, add the sausage and begin to cook for about 3-4 minutes (no oil needed before adding the sausage). Next add the onion to sauté for 1-2 minutes, then the garlic, spices and hot sauce. Cook for an additional minute.
- Add the chicken broth, beans and potatoes to the pot. Cover and simmer for 20 minutes or until the potatoes are fork tender.
- Lastly, add the heavy cream and kale. Cook for another minute until the kale turns a deeper shade of green and wilts.
- Serve and top with cracked pepper and/or red pepper flakes, if desired. Enjoy!

- 1/2 medium yellow Onion diced
- 2 tablespoons garlic minced
- 3 cups kale fresh, chopped
- 1.5 pounds Yukon Gold Potatoes cubed
- 1/2 teaspoon black pepper
- 1/2 teaspoon mustard powder
- 1/2 teaspoon paprika
- 1 tablespoon hot sauce
- 4 cups chicken broth
- 1 (15 ounce) can butter beans drained
- 1/2 cup heavy cream
