I’ve always been a big fan of make-ahead breakfast ideas.

It eliminates so much rush and confusion in the morning, when you can just walk over to the refrigerator, pull out the casserole dish, and pop it in the oven.

This is a recipe I’ve been relying on for part of our Christmas breakfast for years (in addition to homemade cinnamon rolls).

And just recently, I decided that it would be a great Sunday morning breakfast to replace our old standby, Dutch Puff, which didn’t fit my THM guidelines.

This simple breakfast casserole is easy to put together the night before, which is what I try to remember to do on Saturday evenings while I’m cleaning up the kitchen.

Simple Breakfast Casserole (THM-S)

serves 6-8

Ingredients:

  • Roll of sausage (pork or turkey—either work fine)
  • 8 large eggs
  • 1/2 cup heavy cream
  • 1/4 teaspoon salt
  • 1 cup shredded cheddar cheese

 Directions:

  1. Preheat oven to 350 degrees.
  2. Cook the sausage in a skillet.
  3. In a mixing bowl, whisk together the eggs, cream, and salt.
  4. Pour the egg mixture into a 9″x 13″ casserole dish.
  5. Add the cooked sausage to the egg mixture in the pan, sprinkling it evenly over the casserole.
  6. Sprinkle cheese over the top.
  7. Bake uncovered in a 350 degree oven for 30-40 minutes or until the casserole is set in the middle.

To Prepare in Advance:

  1. Assemble the casserole in the evening, then cover with plastic wrap and refrigerate overnight.
  2. In the morning, remove the plastic wrap and put the casserole in the oven (without preheating first). Then turn the oven on and set temperature at 350 degrees.
  3. Bake for 30-40 minutes (might take closer to 40 minutes since it will be cold).

    Outstanding dish. Being from New Mexico, I made this with an addition of one-half cup of flame roasted Hatch green chile. Additionally one cup of cottage cheese really fills out the casserole and adds protein to the end result.

    Could any vegetables be added and stay within plan? I’m just starting this program and don’t fully understand yet lol

      Yes, you could add vegetables. Bell pepper and onion work well. You can use either fresh vegetables or the frozen kind. I would add about a cup of vegetables, or maybe a whole bell pepper and half an onion. Other non-starchy vegetables can work with an “S” meal as well, like broccoli, mushrooms, spinach, etc. Hope that helps!

    Could I use half and half instead of heavy cream?

      Yes, I believe that would work. I haven’t tested the recipe with half and half, but it seems like it should work, as it’s a pretty flexible recipe.

    Trying this recipe this morning. I didn’t have sausage, so I used pre-cooked bacon. I don’t tend to do casseroles, but I’m trying to expand. Love trying new recipes! We’ll see how this goes! 🙂
