This baked oatmeal recipe is a delicious and easy breakfast idea. Featuring simple and healthy ingredients like old-fashioned oats, maple syrup, and fresh berries, this recipe is a great one to add to your weekly breakfast rotation.

When my kids were little, I was always looking for quick and easy breakfast ideas. When I first came across baked oatmeal, I wasn’t sure if my kids would like it. But when I tried it, it was definitely something the whole family loved! We ended up making several different versions of it, including this soaked baked oatmeal and this delicious apple pecan baked oatmeal.

In addition to variations of baked oatmeal, we also love making Dutch Puff in a 9 x 13 pan, easy breakfast casserole, and overnight breakfast parfaits.

My favorite way to make this recipe is to start it the night before, and then finish mixing it up and pop it in the oven the next morning. Anything I can do to make meal prep easier is a definite plus!

  • Oats: This recipe calls for old-fashioned oats. You can use other types of oats but old-fashioned give the best results.
  • Milk: I prefer using regular whole milk but you can use a non-dairy milk such as unsweetened almond milk if you’re avoiding dairy. 
  • Maple syrup: Pure maple syrup is the main sweetener used in this recipe.
  • Butter: This recipe calls for unsalted butter but salted will also work. Coconut oil may be used in place of butter. 
  • Berries: This recipe uses fresh berries, but you can substitute frozen berries (just be sure to add them frozen, and do not thaw them first).

Baked Oatmeal Recipe Tips

  • You can use a 9×13 pan by increasing the recipe ingredients by 1.5 times.
  • You can replace fresh berries with frozen. If using frozen berries, just make sure to not thaw them or over stir them. Otherwise, they will bleed into the oatmeal more. 
  • The sweetness level can be easily changed by adding more or less maple syrup and brown sugar. I wouldn’t take away more than a few tablespoons of each or add more than a tablespoon or two of each. 
  • While old-fashioned oats give the best results, you can also use quick oats if you are okay with the final results being a bit softer and less well-defined. 
  • Replace the berries with other types of fruit or even some chocolate chips, raisins, or dried fruit.

How to Make Baked Oatmeal

Step 1. Preheat the oven to 350 degrees F and spray a 9×9 square baking dish or pan with cooking spray.

Step 2.  In a large mixing bowl, whisk together the milk, eggs, syrup, brown sugar, butter, baking powder, vanilla extract, cinnamon, and salt until well combined.

Step 3. Sprinkle the oats and berries into the wet ingredients and gently stir to combine. Do not over mix.

Step 4.  Add the oat mixture to the prepared baking pan.

Step 5. Bake for about 35 minutes or until the center looks nearly set. If you want a drier result, bake until the center looks totally set, about 40-45 minutes.

How to Serve

To serve baked oatmeal, cut into slices and top with maple syrup and whipped cream or yogurt.

How to Store

Baked oatmeal can be stored in the refrigerator for up to 4-5 days in an airtight container.

Make Ahead Instructions

If you want to prepare this overnight and bake the next morning, I recommend using steel cut oats instead of old-fashioned oats.

If you use old-fashioned oats and let this sit overnight, your oats will be softer and more cake-like rather than having a normal oatmeal consistency. But this is fine as long as you are okay with having a softer and less-defined texture.
