Why You’ll Love This Recipe

This recipe is a chocolate-lover’s dream! Chocolate is such a universally-appealing flavor. I’ve noticed that anytime I take a chocolate dessert to a get-together or party, I’m pretty much guaranteed it will be a hit.

Often, I opt for chocolate cream cheese brownies or chocolate crinkle cookies, but this chocolate brownie cookies recipe is another favorite.

They’re fairly quick to make, so if you need a quick and easy dessert recipe, these would be a great option.

Brownie Cookies Ingredients

Find the full list of ingredients and amounts in the printable recipe card below.

  • Chocolate Chips: Semi-sweet chocolate chips are used for best flavor.
  • Butter: Unsalted butter is used in this recipe. If you use salted butter, you may want to omit some of the salt in the recipe.
  • Eggs: You’ll need 2 large eggs, at room temperature. Be sure they’re room temperature for best results.
  • Sugar: White granulated sugar
  • Vanilla Extract: Use store-bought or homemade vanilla.
  • Flour: All-purpose flour is used, and I try to find unbleached flour.
  • Cocoa Powder: For extra chocolate-y flavor!
  • Salt: If you used salted butter, you may want to omit some of the salt.
  • Baking Soda: This is the leavening agent for these cookies.

2. In a small saucepan, over low heat, melt the chocolate chips and butter. Remove from heat and allow to cool.

3. In a large bowl, or the bowl of a stand mixer (using the whip attachment), combine the eggs, sugar, and vanilla. Whip (with the stand mixer or a handheld electric mixer) on a high speed for about 5 minutes or until the mixture looks fluffy and light.

4.Pour the bowl of melted chocolate chips and butter into the egg and sugar mixture, mixing on a lower speed until all ingredients are incorporated.

5. Add the flour, cocoa powder, salt, and baking soda, mixing on low speed until all ingredients are combined. The batter will be a bit thin (not as thick as cookie dough).

6. Use a spoon or a cookie scoop to drop the cookie dough onto the prepared baking sheets. Place each blob of dough about 2-3 inches apart, as these cookies will spread.

7. Bake at 350 degrees F for 10 minutes or until the edges of the cookies are firm.

8. Remove baking sheets from the oven and allow cookies to cool on the cookie sheet for 10-15 minutes. Then remove cookies to a wire rack to finish cooling.

9. Store cookies in an airtight container for up to 4 days.

Brownie Cookies Tips

  • A great addition to these would be a sprinkle of coarse sea salt when they are fresh out of the oven!
  • Be sure to use an electric or stand mixer to mix your dough.

Frequently Asked Questions

What if my cookie batter is too thin?

This brownie cookie recipe makes fudgy cookies that have a fudgy center and a crinkly top. The batter will look more like brownie batter, which is a bit thinner and less like a thick cookie dough.

How can I tell if my cookies are done?

After about 10 minutes of baking, the edges of your cookies should be crispy.

Do I have to use a stand mixer?

No, but I don’t recommend doing it by hand. You will need an electric hand mixer.

How long can I store Brownie Cookies?

These will store in an airtight container for up to 4-5 days.
