Instant Pot Pot Roast | Simple Dinner Recipe

Instant Pot Pot Roast is one of my favorite simple, healthy, easy recipes! Whenever I don’t have time to plan a more elaborate meal, this simple recipe is a lifesaver.

A few years ago I was gifted an Instant Pot for Christmas. It took me awhile to get into using it regularly, but now I love it.

I’m a huge fan of electric pressure cooking for so many things!

My Instant Pot helps me quickly and easily make whole chicken, bone broth, boiled eggs, applesauce, apple butter, beans, and even elderberry syrup!

This is the Instant Pot we have. The large size works well for our family of seven.

I think even if I had a smaller family I would still prefer the larger size, so I could cook larger quantities to freeze for later.

How to Make Instant Pot Pot Roast

One of our favorite things to make in the Instant Pot is roast.

We eat Instant Pot Pot Roast year round, but it’s especially delicious when the weather is cooler, and we’re craving comfort food.

My kids love their roast with mashed potatoes. My husband and I eat ours with mashed cauliflower for a lower-carb version.

I prefer to cook the potatoes separately from the roast, so my recipe doesn’t include the potatoes.

This is a quick and easy dinner recipe. Making pot roast in the Instant Pot saves time.

All you have to do is cut up the vegetables, brown the meat, and let the Instant Pot do the rest!

Ingredients for This Recipe

  • 8 whole carrots cut into large pieces
  • 2 large onions, peeled and quartered
  • 2 Tbsp butter
  • 3-4 lbs. beef chuck roast
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 Tbsp butter
  • 1 tsp garlic powder
  • 2 cups water or beef stock

How to Cook a Roast in the Instant Pot

1. First, prepare the onions and carrots and set aside.

2. Select “sauté” on the Instant Pot and let it warm up. Add 2 Tablespoons of the butter and allow to melt.

3. While butter is melting, season the roast with salt and pepper.

4. Add the beef to the pot and brown on all sides for 3-4 minutes per side. Remove browned meat and put on a plate and set aside.

5. Add the other 1 Tablespoon of butter to the Instant Pot and let it melt. Then add onions and carrots to Instant Pot and cook for about 3-4 minutes until softened and lightly browned, stirring occasionally. Stir in the water or beef stock and the garlic powder. Scrape the bottom of the pot with a wooden spoon, releasing all the browned parts, which adds more flavor.

6. Add the roast back to the pot with the vegetables.

7. Put on the lid, lock it, and set vent to sealing. Use the “manual” button to set the time to 60 minutes on high pressure.

8. When cooking time is up, allow pressure to naturally release for 15-20 minutes. Then do a quick release.

9. Serve with mashed potatoes or mashed cauliflower.
